oysters with ramp kimchi
radish and lamb lardo toast
boston mackerel with grilled ramps, young tamarack, pine nuts and parsley
poached egg with asparagus, fiddleheads and lily shoots, valdeon-miso
smoked pork belly with rhubarb, hazelnuts and rhubarb mustard
champagne mango brulee, candied ginger and pistachio
